Ortiz tuna has been a Garlands best-seller for years and it’s loved in equal measures by top chefs and food writers where you’ll see the famous red and yellow print cans on their kitchen shelves.
Conservas Ortiz is based on the Cantabrian coast of north west Spain – it’s a family-run business and has been supplying top quality tuna and anchovies since 1891.
The best cuts of the fish are filleted on the boats and tinned in good olive oil. Unlike water, the olive oil adds flavour and imparts a silky texture over time. Water can actually leach flavours from the tuna.
Bonito del Norte or White Tuna is caught in the summer months using rods and live bait. The fillets are white to pale pink in colour with a mild flavour and good, firm texture.
Atun Claro or Yellowfin Tuna is a little darker and with a stronger flavour than Bonito.
Both varieties caught by Ortiz are dolphin safe.

Ortiz anchovies spend at least 6 months curing in rock salt and are hand-filleted to give large, meaty fillets without “hairiness”. We find they simply melt in the pan – and in your mouth! Won gold in the 2008 Great Taste Awards.
